Chickpea Salad Recipe

Wednesday, January 12th, 2011

I tend to get on little food kicks when I make the same thing over and over, with minor variations, day in and day out. Lately, it’s been this super-easy and fun way to enjoy beans. The original recipe, a mock tuna salad, is made with chickpeas and tastes a little more like egg salad as I recall it than tuna, but that’s nothing a little sea seasonings can’t fix.

Anyway, as you can see from the montage below, I’ve been seriously playing around (I like that, “seriously playing around”, lol) with different beans and additions. I use regular onions over green, a hot/sweet pickle relish, and add garlic powder and celery seeds.

As for the mayo, I’ve used both of these low cal, low fat, vegan options in different batches…

What’s your favorite bean spread recipe?
