Vegan Christmas 2009

OK, I just finished making the main course about an hour ago and still have some acorn squash to cook, but first, let me show you what I created.  

Another impromptu, from-scratch, dish. This one’s really easy too… a one pot meal! (The best kind, right?) So, you could even make this “in the background” while you entertain guests.

Alright, let’s get on with the “recipe.”


  • 1/2 lb bag of black beans
  • 1 pack Kashi mixed grains
  • 6 oz tomato paste
  • 1/4-1/2 large onion
  • 1/2-1 jalapeno
  • 1.3 Tb porcini powder

Add to that list a well-stocked spice rack. This time around, I used oregano, cumin, dried parsley, mustard powder, ground cumin, onion and garlic powders, black pepper, and cinnamon.


Start off with a good two-hour boil for the black beans. You can probably cut that time in half if you soak them the night before. I tend to skip that step nowadays and just cook them longer.

Dump in a packet
(1 cup, 4 servings)
of Kashi.

Here’s how it looked before stirring in.

Keep up a slow boil for twenty minutes to cook the grains, adding more water, as needed.

At this stage, with our main ingredients properly cooked, add in the onion and jalapeno, both diced, and a Tablespoon of the porcini mushroom powder (purchased in bulk from FungusAmongus). Simmer to meld flavors and soften the veggies (speaking of which, sliced carrots would be good here too, but with acorn squash on the menu, I left them out).

Now, it’s time to taste and spice (your choice of flavors). I chose bold earthy ones to match the porcini and even added a teaspoon more of that (hence the 1.3 Tb in the ingredient list). Also, a touch of cinnamon at the end for the Christmas flare. The big decision though was whether or not to add the tomato paste. Ultimately, I did (first 3 oz then the other 3). It’d be good either way, I think. So, as the mood strikes you. Anyway, the final result…

I can hardly wait to dig in. As a matter of fact, a portion of this will be dinner tonight. The rest is heading to Mom’s along with a baked squash tomorrow, and she’s got the salad and some broccoli to round it out. Have a merry one!

Vegan Bodybuilding at 72

In a recent conversation in the Eat-2-Live Yahoo! group, someone was questioning whether it was possible to acquire an extremely defined, large, bodybuilder’s physique on a vegan diet.

The usual examples were proferred, including Brendan Brazier, of “Thrive Diet” fame, Robert Cheeke, and VeganBodyBuilding.com. Somehow, these amazing specimens were seen as either too thin, too small, or too “soft” (especially, the women). What?!

There was another, one Joe DeMarco, with whom I was not familiar. Definitely ripped!

I wondered aloud whether the comparison was apples to oranges, i.e., that is were the meat eating bodybuilders to which the vegans were being held up also (or should I say, otherwise?) “natural” bodybuilders, or were steroids involved?

Anyway, regardless, the whole thread reminded me I had this short clip queued up since last year.
