Fascinating post, Erin. Thanks for sharing. My feelings are that I would gain a pound if I ate your diet one day. My brain tells me that I would not. When I tried being disciplined about gluten/sugar free one week, I found that to survive I had to eat a lot more of fruits and vegetables than I normally do. I still lost weight. So maybe if I tried your diet, I might not gain weight. Yet, my daily caloric intake is about 1700 to 1800. 2100 would be high for my particular metabolism. It appears that you are applying the 80-10-10 diet. I'm not sure if it is called that.
Cheers,
Arturo

Thanks, guys!

Mike, you must have me on a feed, heh? Just ten minutes after the post went live, and you'd read and responded. :) Glad I could help. Best of luck with CRON, and don't hesitate to ask questions. It would be great to add you to the blogroll. Keep me posted.

Kevin, regarding B12, the Brewer's Yeast I use, Lewis Labs brand (delicioius stuff), is not fortified. It naturally contains 0.2 mcg in the 20 grams I take daily (2 heaping tablespoons), so I guess that got rounded down in the output. My understanding is the B12 in yeast is not all that assimilable anyway, so I prefer to supplement sublingually as well.

Interesting combos... reckon that's my signature style. ;)

For breakfast, I puree the beans with a stick blender. The big, dried lima beans work well, as they don't impart a strong flavor and get quite creamy. I make up a batch of four servings at a time. To the morning ration, I mash in the sliced banana for an oatmeal-like consistency, then stir in finely chopped carrots or butternut squash and the flaxseeds for crunch. The juice and spirulina are taken separately.

For dinner, I chop all the veggies using the Vidalia Chop Wizard (yes, as seen on TV; I'm a big fan) and put them in a huge 2.5 quart glass bowl. It's something of a "one for the bowl, one for me" routine. Then I pour the warmed tomato/mushroom sauce and konjac noodles over top it all, splash a little red wine, and pig out. Very filling, but possessing a great N/C ratio, which really is the name of the game with CRON and/or Eat-To-Live.
